| In order to do a helicopter turn you basically frog kick forward with one foot and backwards with the other. As a stepping stone to this, you can turn in small circles using just one foot at a time, so finning forward with only one foot, or swimming backwards with only one foot. Once you are relaxed with this, try one cycle forwards with one foot and one cycle backwards with the other. Once you are happy with this then try doing both at once.
